Ingredients:
- 5 skinned potatoes, each one sliced into 4 pieces.
Ingredients for the meat:
- 1 kilo of minced meat
- 1 clove of grated garlic
- 1 grated onion
- 1 egg
- 25 ml of olive oil
- 50 ml of water
- 1 teaspoon of mint
- salt and pepper
Ingredients for the sauce:
- 1 spoon of tomato paste
- 1 cup water
Place all the
ingredients together:
Place all the meat
ingredients into a bowl and knead well. Mould the mixture
into small rolls of a longish shape the size of your fist.
Place these rolled elongated meat balls into a roasting pot
leaving space in between each one. Now place the sliced
potatoes in the gaps between the meatballs.
Now create the tomato sauce by placing
1 spoon of tomato paste into 1 glass of water and mix until
thick.
Place the sauce
onto the soutzoukakia and potatoes. Place another
1 1/2 glasses of water and 1/2 cup of olive oil around the soutzoukakia and
potatoes.
Cover and place
into the oven for 1 1/2 hours.
Serves 6-8 servings.
